Yesterday morning, and by morning I mean around 2pm I made cookies for breakfast but I ended up burning them because I forgot about them in the oven, soooo today I decided to make breakfast tacos to cheer myself up. Not sure why I made this around 5pm...my eating and sleeping pattern has turned into a disaster.

2x taco shells
¼ large zuchinni
½ bell pepper
Avocado – I wanted to spread it inside the Taco but it wasn’t soft enough. I roughly used 3Tbsp
Handful of small whole baby potatoes
Few drops of Almond milk/cream or milk
Cheese to grate on top of the tacos
Other options - Bacon, mushrooms, tofu, onions, sausages, any other vegetables etc.
Salt + pepper
BBQ spice mix
*You can use whatever seasonings you have if you don’t have any of the above
